Truffle Skillet Nachos
INGREDIENTS:
- 1 wheel Truffleist Truffle Kunik, cubed
- 1⁄2 lb cheddar cheese, shredded
- 1 bag tortilla chips
- 1⁄2 lb roasted brussels sprouts
- 1⁄4 cup dried cranberries
- Extra roasted veggies (optional)
DIRECTIONS:
- Clean and halve brussels sprouts
- Place on baking sheet
- Drizzle with olive oil and salt
- Roast for 20 minutes
- Layer tortilla chips on bottom of a cast iron skillet
- Top with roasted brussels
- Add additional roasted vegetables as desired (we love butternut squash)
- Sprinkle with cheddar cheese
- Layer cubed Truffleist Truffle Kunik over cheddar
- Place in 400 degree oven for 5 - 10 minutes or until cheese is melted
- Remove from oven and sprinkle cranberries over top immediately
- Let stand 2 - 5 minutes before serving
- Enjoy!
