Truffle Elote Corn

Fire up your grill and make this perfect summer side dish: elote corn, also known as Mexican Street Corn. Our Truffle Mayo is the perfect base for this elote and it adds the perfect hint of truffle.

Servings: 5


INGREDIENTS:

  • 5 ears of corn 
  • 2 tbsp melted butter
  • ¼ cup Sour cream 
  • ¼ cup The Truffleist Truffle Mayo
  • 1 Lime (cut into wedges)
  • 1 teaspoon chili powder
  • 5 wooden skewer sticks
  • ⅓ cup Cotija cheese, grated into small crumbles
  • Chopped cilantro for garnish

 

PREPARATION INSTRUCTIONS:

  1. Heat your grill to medium high heat.
  2. Skewer each of your ears of corn to make for cleaning assembly and eating later!
  3. Brush each ear of corn with the melted butter, coating completely. 
  4. Grill corn for 10-12 minutes, flipping the corn every 2 minutes to get an even char. Remove corn from the grill, set aside, and let cool. 
  5. In a small bowl, mix the truffle mayo and sour cream. Once corn is cooled, brush the ear of corn with the mayo and sour cream mixture. Before setting the corn back down, sprinkle the corn with cotija cheese on all sides. 
  6. Once you have done this to all of the corn, lightly sprinkle the chili powder on the ears of corn. Then sprinkle with the cilantro and a squeeze of lime.
