Truffle Honey-Hummus Flatbread
1 x pre- baked flatbread, packaged
Olive oil
1 x zucchini
1 x yellow summer squash
1 x red onion
1 x pint cherry tomatoes
2 x garlic clove
1 x package Ithaca Hummus, classic
4 oz crumbled feta cheese
1/2 tsp red pepper flakes

Fresh mint
Kosher salt and black pepper
Warm the flatbread according to package directions
Slice zucchini and summer squash onto 1/4” rounds
Peel and halve red onion and slice into 1/4” half moons
Slice garlic cloves
Place sliced veggies into a bowl, add whole cherry tomatoes
Drizzle veg with approximately 1 - 2 tbsp olive oil, season with kosher salt and pepper, sprinkle with red pepper flakes, and toss to coat
Layer veggies on sheet pan and roast at 375 til sliced veg are tender and tomatoes are blistered, approx 20 minutes
Spread warmed flatbread with Ithaca hummus
Layer crumbled feta atop hummus
Artfully arrange roasted vegetables on top of feta cheese
Season with salt and pepper
Drizzle with Truffle Honey
Top with fresh mint leaves
Slice flatbread
Serve and enjoy!
